Ingredients
1 cup cream cheese, softened
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
3/4 cup fresh or frozen raspberries (thawed and drained if frozen)
1 cup graham cracker crumbs
12 oz white chocolate chips or melting wafers
1 tablespoon coconut oil (optional, for smoother coating)
Instructions
1. In a large bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
2. Fold in raspberries gently, mashing slightly as you mix.
3. Stir in graham cracker crumbs until mixture holds together.
4. Chill mixture for 30 minutes to firm up.
5. Roll into 1-inch balls and place on a parchment-lined tray. Freeze for 15 minutes.
6. Melt white chocolate and coconut oil together until smooth.
7. Dip each ball into melted white chocolate using a fork, then place back on parchment.
8. Chill until the coating is set. Drizzle with extra chocolate or sprinkle with crumbs if desired.
Notes
Use a cookie scoop for even-sized cheesecake balls.
If the mixture is too soft to roll, chill longer or add extra graham crumbs.
