For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (4 oz) diced green chilies
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp chili powder
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup corn kernels
- 1/4 cup fresh cilantro, chopped
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sautΓ© until the onion is soft and translucent.
- Add the cubed chicken to the pot and cook until lightly browned on all sides. Stir in cumin, oregano, chili powder, salt, and pepper.
- Add the diced green chilies, chicken broth, and white beans. Bring the mixture to a simmer and cook for 20 minutes. Stir in the corn and cook for an additional 5 minutes. Garnish with fresh cilantro before serving.
