White Chicken Chili Recipe

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup corn kernels
  • 1/4 cup fresh cilantro, chopped

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sautΓ© until the onion is soft and translucent.
  2. Add the cubed chicken to the pot and cook until lightly browned on all sides. Stir in cumin, oregano, chili powder, salt, and pepper.
  3. Add the diced green chilies, chicken broth, and white beans. Bring the mixture to a simmer and cook for 20 minutes. Stir in the corn and cook for an additional 5 minutes. Garnish with fresh cilantro before serving.

Notes

You can customize the seasonings to taste.
