For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 tsp baking powder
- 1/2 tsp salt
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup crushed pineapple, drained
- 1/2 cup white chocolate chips
- 1/2 cup pineapple juice
Instructions
1. Prepare the Crust:
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, blending well after each one. Stir in vanilla extract.
- Combine flour, baking powder, and salt; gradually add to the creamed mixture, alternating with pineapple juice. Fold in crushed pineapple and white chocolate chips. Pour into the prepared pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
