For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple, drained
  • 1/2 cup white chocolate chips
  • 1/2 cup pineapple juice

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, blending well after each one. Stir in vanilla extract.
  3. Combine flour, baking powder, and salt; gradually add to the creamed mixture, alternating with pineapple juice. Fold in crushed pineapple and white chocolate chips. Pour into the prepared pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
