For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries, sliced
- 2 kiwis, peeled and sliced
Instructions
1. Prepare the Crust:
- In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined. Press firmly into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese until smooth. Add heavy cream, powdered sugar, and vanilla extract. Whip until light and fluffy.
- Spread the cream cheese mixture evenly over the crust. Chill in the refrigerator for at least 4 hours or until set.
- Before serving, arrange sliced strawberries and kiwi on top of the cheesecake. Slice and enjoy!
