For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 2 cups fresh peaches, diced
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup cold butter, cubed
- 1/2 tsp cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 325Β°F (165Β°C). Mix graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla. Pour over crust.
- In a bowl, combine flour, brown sugar, cinnamon, and cold butter to form a crumble. Sprinkle over cheesecake batter.
- Bake for 50-55 minutes or until center is set. Cool completely, then refrigerate for at least 4 hours.
- Top with diced peaches before serving.
