For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups fresh peaches, diced
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup cold butter, cubed
  • 1/2 tsp cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325Β°F (165Β°C). Mix graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla. Pour over crust.
  3. In a bowl, combine flour, brown sugar, cinnamon, and cold butter to form a crumble. Sprinkle over cheesecake batter.
  4. Bake for 50-55 minutes or until center is set. Cool completely, then refrigerate for at least 4 hours.
  5. Top with diced peaches before serving.

Notes

You can customize the seasonings to taste.
