For the Crust:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 1/2 cups heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract (for filling)
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream (for ganache)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
- Gradually stir in boiling water until the batter is smooth. The batter will be thin.
- Pour batter evenly into prepared pans. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the filling, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread evenly over one cake layer, then top with the second layer.
- For the ganache, heat 1/2 cup heavy cream until steaming. Pour over chocolate chips, let sit for 2 minutes, then stir until smooth. Pour over the assembled cake, allowing it to drip down the sides.
- Refrigerate for at least 30 minutes before serving.
