For the Crust:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 1/2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract (for filling)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for ganache)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Gradually stir in boiling water until the batter is smooth. The batter will be thin.
  5. Pour batter evenly into prepared pans. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the filling, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread evenly over one cake layer, then top with the second layer.
  8. For the ganache, heat 1/2 cup heavy cream until steaming. Pour over chocolate chips, let sit for 2 minutes, then stir until smooth. Pour over the assembled cake, allowing it to drip down the sides.
  9. Refrigerate for at least 30 minutes before serving.
