For the Crust:
- 1 1/2 cups chocolate cookie crumbs
- 6 tablespoons unsalted butter, melted
- 12 ounces dark chocolate, chopped
- 12 ounces milk chocolate, chopped
- 12 ounces white chocolate, chopped
- 4 cups heavy cream, divided
- 6 large eggs, separated
- 1/4 cup granulated sugar
- Pinch of salt
Instructions
1. Prepare the Crust:
- Make the crust: Combine cookie crumbs and melted butter. Press firmly into the bottom of a 9-inch springform pan. Chill for 30 minutes.
- Make the dark chocolate layer: Melt dark chocolate with 1/2 cup cream. Let cool slightly. Whip 1 cup cream to stiff peaks; fold into chocolate. Spread over crust and chill for 1 hour.
- Make the milk chocolate layer: Melt milk chocolate. Whip egg whites with sugar to stiff peaks. Whip 1 cup cream to stiff peaks. Fold egg whites and whipped cream into melted chocolate. Spread over first layer and chill for 1 hour.
- Make the white chocolate layer: Melt white chocolate. Whip remaining 1 1/2 cups cream to stiff peaks. Fold into white chocolate. Spread over the torte and chill for at least 4 hours or overnight before serving.
