Dark Chocolate Mousse:

6 oz dark chocolate, chopped

1 cup heavy whipping cream

1/2 teaspoon vanilla extract

1/2 tablespoon powdered gelatin

2 tablespoons water

Milk Chocolate Mousse:

6 oz milk chocolate, chopped

1 cup heavy whipping cream

1/2 teaspoon vanilla extract

1/2 tablespoon powdered gelatin

2 tablespoons water

White Chocolate Mousse:

6 oz white chocolate, chopped

1 cup heavy whipping cream

1/2 teaspoon vanilla extract

1/2 tablespoon powdered gelatin

2 tablespoons water


Instructions

1. Grease and line the base of an 8-inch springform pan.

2. Mix crushed cookies and melted butter. Press into pan and chill for 15 minutes.

3. For each mousse layer: sprinkle gelatin over water and let bloom for 5 minutes.

4. Heat 1/4 cup of cream until warm, then dissolve bloomed gelatin in it.

5. Pour warm cream over chocolate. Let sit, then stir until smooth.

6. Whip remaining cream until soft peaks form. Fold into chocolate mixture.

7. Spread dark chocolate mousse over chilled crust. Chill for 30 minutes.

8. Repeat the same steps for milk chocolate mousse. Spread over dark layer. Chill again.

9. Finally, repeat for white chocolate mousse and spread as the top layer.

10. Chill the entire cake for at least 4 hours or overnight before removing from pan.

11. Garnish with chocolate shavings or cocoa powder if desired.

Notes

Use high-quality chocolate for the silkiest mousse.

Chill each layer fully before adding the next to keep clean lines.

Run a warm knife around the springform edge before releasing for clean presentation.
