Description

A delightful dessert combining sweet toffee and apples in a flaky pie crust, served with creamy vanilla custard.


Ingredients

  • For the Pie Crust: 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 1/2 teaspoon salt
  • 6–8 tablespoons ice water
  • For the Filling: 6 medium apples, peeled and sliced
  • 1 cup toffee bits
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • For the Vanilla Custard: 2 cups whole milk
  • 1/2 cup sugar
  • 4 egg yolks
  • 2 tablespoons cornstarch
  • 1 vanilla bean, split and scraped

Instructions

  1. Step 1: Prepare the pie crust by combining flour, butter, and salt in a bowl until mixture resembles coarse crumbs. Add ice water one tablespoon at a time until dough forms. Wrap and chill for 30 minutes.
  2. Step 2: For the filling, toss sliced apples with sugars, cornstarch, cinnamon, and nutmeg in a large bowl. Stir in toffee bits and set aside.
  3. Step 3: Roll out the chilled dough on a floured surface and line a 9-inch pie dish. Add the apple filling to the crust.
  4. Step 4: Roll out the second portion of dough for the top crust and place over the filling. Seal and crimp the edges, then cut slits for steam.
  5. Step 5: Bake the pie at 375Β°F for 45-50 minutes or until golden brown. Let cool.
  6. Step 6: For the custard, heat milk and vanilla in a saucepan. In a bowl, whisk egg yolks, sugar, and cornstarch. Slowly add hot milk to the egg mixture, then return to the saucepan and cook until thickened. Strain and chill.
  7. Step 7: Serve slices of pie with a generous dollop of vanilla custard.

Notes

Ensure apples are tart for a balanced flavor. Store leftovers in the refrigerator for up to 3 days.
