For the Crust:

  • 1 pound ground chicken
  • 2 tablespoons red curry paste
  • 1 cup coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 egg, beaten
  • 1 cup panko breadcrumbs
  • 2 tablespoons vegetable oil
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • Fresh cilantro, for garnish

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine ground chicken, red curry paste, garlic, ginger, beaten egg, panko breadcrumbs, soy sauce, and fish sauce. Mix well until all ingredients are combined.
  2. Shape the mixture into small meatballs, about 1 inch in diameter.
  3. Heat vegetable oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.
  4. Reduce heat to low and pour in coconut milk, lime juice, and brown sugar. Stir to combine and let the meatballs simmer in the sauce for an additional 10-15 minutes until fully cooked.
  5. Garnish with fresh cilantro and serve hot.

Notes

You can customize the seasonings to taste.
