For the Crust:
- 1 pound ground chicken
- 2 tablespoons red curry paste
- 1 cup coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 egg, beaten
- 1 cup panko breadcrumbs
- 2 tablespoons vegetable oil
- 1 tablespoon lime juice
- 1 teaspoon brown sugar
- Fresh cilantro, for garnish
Instructions
1. Prepare the Crust:
- In a large bowl, combine ground chicken, red curry paste, garlic, ginger, beaten egg, panko breadcrumbs, soy sauce, and fish sauce. Mix well until all ingredients are combined.
- Shape the mixture into small meatballs, about 1 inch in diameter.
- Heat vegetable oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.
- Reduce heat to low and pour in coconut milk, lime juice, and brown sugar. Stir to combine and let the meatballs simmer in the sauce for an additional 10-15 minutes until fully cooked.
- Garnish with fresh cilantro and serve hot.
