Description
Rich, buttery chicken with creamy garlic-Parmesan pasta. A comforting, weeknight-friendly dish made in just 30 minutes.
Ingredients
2 large boneless, skinless chicken breasts, diced
2 tablespoons olive oil
3 tablespoons unsalted butter, divided
4 cloves garlic, minced
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and black pepper, to taste
1 cup heavy cream
3/4 cup freshly grated Parmesan cheese
8 oz pasta (penne or fettuccine)
1/4 teaspoon ground nutmeg (optional)
Fresh parsley, chopped (for garnish)
Instructions
1. Toss diced chicken with garlic powder, paprika, salt, and pepper.
2. Heat olive oil and 1 tbsp butter in skillet over medium heat. Add chicken and cook 5β6 min until golden and cooked through.
3. Add half the minced garlic during last minute of cooking. Set chicken aside.
4. Melt remaining butter in the same skillet. Add remaining garlic and cook until fragrant.
5. Pour in heavy cream and stir to combine. Simmer gently.
6. Add Parmesan gradually, stirring until melted. Add nutmeg if using. Season to taste.
7. Cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
8. Add pasta to sauce, tossing to coat. Adjust consistency with pasta water.
9. Return chicken to skillet and stir. Garnish with parsley and extra Parmesan.
Notes
Use fresh Parmesan for best melting texture.
For meal prep, store chicken and pasta together, add a splash of cream when reheating.
