For the Crust:
- 2 medium sweet potatoes, peeled and diced
- 1 can black beans, drained and rinsed
- 1 cup cooked quinoa
Instructions
1. Prepare the Crust:
- Preheat oven to 400Β°F (200Β°C). Spread sweet potatoes on a baking sheet, drizzle with olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
- In a bowl, mix the roasted sweet potatoes, black beans, and cooked quinoa together.
- Serve in bowls and top with avocado slices, salsa, and lime wedges.
