For the Crust:

  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 cup cooked quinoa

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400Β°F (200Β°C). Spread sweet potatoes on a baking sheet, drizzle with olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
  2. In a bowl, mix the roasted sweet potatoes, black beans, and cooked quinoa together.
  3. Serve in bowls and top with avocado slices, salsa, and lime wedges.
