Sweet Potato Honeybun Cake with Pecans

For the Crust:

  • 2 cups mashed sweet potatoes
  • 1 cup honey
  • 1 cup chopped pecans
  • 1/2 cup butter, melted
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine sweet potatoes, honey, melted butter, and vanilla extract.
  3. In a separate bowl, mix flour, brown sugar, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
  5. Fold in the eggs and mix until just incorporated.
  6. Pour the batter into the prepared baking dish and sprinkle pecans evenly over the top.
  7. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before slicing and serving.
