For the Crust:
- 2 cups mashed sweet potatoes
- 1 cup honey
- 1 cup chopped pecans
- 1/2 cup butter, melted
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 2 large eggs
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine sweet potatoes, honey, melted butter, and vanilla extract.
- In a separate bowl, mix flour, brown sugar, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
- Fold in the eggs and mix until just incorporated.
- Pour the batter into the prepared baking dish and sprinkle pecans evenly over the top.
- Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before slicing and serving.
