Sweet Potato Hand Pies

Delicious handheld pies filled with a spiced sweet potato mixture, perfect for a cozy treat.

For the Crust:

  • 2 medium sweet potatoes, peeled and diced
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • 1 package refrigerated pie crusts
  • 1 egg, beaten

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 375Β°F (190Β°C).
  2. Boil the sweet potatoes in a pot of water until tender, about 15 minutes. Drain and mash the potatoes.
  3. Mix the mashed sweet potatoes with brown sugar, cinnamon, nutmeg, and vanilla extract.
  4. Roll out the pie crusts on a flat surface. Cut into circles using a cookie cutter.
  5. Place a spoonful of the sweet potato mixture on one half of each dough circle. Fold the other half over the filling and crimp the edges with a fork.
  6. Place the hand pies on a baking sheet lined with parchment paper. Brush the tops with beaten egg.
  7. Bake for 15-20 minutes or until golden brown. Let cool before serving.

Notes

You can customize the seasonings to taste.
