For the Crust:
- 2 medium sweet potatoes, peeled and diced
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- 1 package refrigerated pie crusts
- 1 egg, beaten
Instructions
1. Prepare the Crust:
- Preheat the oven to 375Β°F (190Β°C).
- Boil the sweet potatoes in a pot of water until tender, about 15 minutes. Drain and mash the potatoes.
- Mix the mashed sweet potatoes with brown sugar, cinnamon, nutmeg, and vanilla extract.
- Roll out the pie crusts on a flat surface. Cut into circles using a cookie cutter.
- Place a spoonful of the sweet potato mixture on one half of each dough circle. Fold the other half over the filling and crimp the edges with a fork.
- Place the hand pies on a baking sheet lined with parchment paper. Brush the tops with beaten egg.
- Bake for 15-20 minutes or until golden brown. Let cool before serving.
