Sun-Dried Tomato, Spinach, and Ricotta Grilled Cheese

A delicious twist on the classic grilled cheese featuring sun-dried tomatoes, fresh spinach, and creamy ricotta cheese.

For the Crust:

  • 8 slices of bread
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach leaves
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter

Instructions

1. Prepare the Crust:

  1. Spread ricotta cheese evenly on one side of 4 bread slices.
  2. Top with sun-dried tomatoes, spinach leaves, and mozzarella cheese.
  3. Place another slice of bread on top and butter the outside of each sandwich.
  4. Heat a skillet over medium heat and grill sandwiches until golden brown on both sides and cheese is melted.
  5. Serve warm and enjoy.

Notes

You can customize the seasonings to taste.
