For the Crust:
- 8 slices of bread
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach leaves
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons butter
Instructions
1. Prepare the Crust:
- Spread ricotta cheese evenly on one side of 4 bread slices.
- Top with sun-dried tomatoes, spinach leaves, and mozzarella cheese.
- Place another slice of bread on top and butter the outside of each sandwich.
- Heat a skillet over medium heat and grill sandwiches until golden brown on both sides and cheese is melted.
- Serve warm and enjoy.
