For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the vanilla extract and egg.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually blend the dry ingredients into the creamed mixture.
  4. Roll out the dough on a floured surface and cut into shapes using cookie cutters. Place cookies on a baking sheet.
  5. Bake for 8-10 minutes or until they are just starting to brown on the edges. Cool on wire racks.
