For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup freeze-dried strawberries, crushed
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat the oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- In a large bowl, beat together the butter, granulated sugar, and brown sugar until creamy. Add the eggs and vanilla extract, mixing until smooth.
- In another bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the freeze-dried strawberries.
- In a small bowl, beat the cream cheese and powdered sugar until smooth.
- Scoop tablespoon-sized balls of cookie dough, flatten slightly, and place a small spoonful of the cream cheese mixture in the center. Wrap the dough around the filling, sealing it inside. Roll into a ball and place on the prepared baking sheet.
- Bake for 12-15 minutes, or until the edges are lightly golden. Cool on a wire rack.
