For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup freeze-dried strawberries, crushed
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat together the butter, granulated sugar, and brown sugar until creamy. Add the eggs and vanilla extract, mixing until smooth.
  3. In another bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the freeze-dried strawberries.
  4. In a small bowl, beat the cream cheese and powdered sugar until smooth.
  5. Scoop tablespoon-sized balls of cookie dough, flatten slightly, and place a small spoonful of the cream cheese mixture in the center. Wrap the dough around the filling, sealing it inside. Roll into a ball and place on the prepared baking sheet.
  6. Bake for 12-15 minutes, or until the edges are lightly golden. Cool on a wire rack.

Notes

You can customize the seasonings to taste.
