Strawberry Cheesecake Pound Cake

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 cup fresh strawberries, diced

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350Β°F (175Β°C) and grease a 9Γ—5 inch loaf pan.
  2. In a large bowl, beat the butter and 1 1/2 cups sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. Mix in the sour cream and vanilla, then gradually add in flour, baking powder, and salt. Reserve 1 cup of batter.
  4. In a separate bowl, beat the cream cheese and 1/4 cup sugar until smooth. Spread half of the remaining batter in the prepared loaf pan, layer with cream cheese mixture, then top with the reserved batter.
  5. Sprinkle diced strawberries over the top and gently swirl them into the batter with a knife.
  6. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

You can customize the seasonings to taste.
