For the Crust:
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 cup fresh strawberries, diced
Instructions
1. Prepare the Crust:
- Preheat the oven to 350Β°F (175Β°C) and grease a 9Γ5 inch loaf pan.
- In a large bowl, beat the butter and 1 1/2 cups sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Mix in the sour cream and vanilla, then gradually add in flour, baking powder, and salt. Reserve 1 cup of batter.
- In a separate bowl, beat the cream cheese and 1/4 cup sugar until smooth. Spread half of the remaining batter in the prepared loaf pan, layer with cream cheese mixture, then top with the reserved batter.
- Sprinkle diced strawberries over the top and gently swirl them into the batter with a knife.
- Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
