Strawberry Birthday Cake Roll is a delightful party-ready dessert made with a fluffy vanilla sponge cake rolled with a fresh strawberry filling and creamy whipped frosting. Each slice is bright, sweet, and beautiful on any celebration table.
Ingredients
Sponge Cake:
3 large eggs
¾ cup granulated sugar
1 tsp vanilla extract
¾ cup all-purpose flour
1 tsp baking powder
¼ tsp salt
¼ cup milk
Strawberry Filling:
1 ¼ cups chopped fresh strawberries
3 tbsp granulated sugar
1 tbsp lemon juice
Whipped Cream Frosting:
1 cup heavy whipping cream
2 tbsp powdered sugar
½ tsp vanilla extract
Sprinkles or extra strawberries for garnish
Instructions
1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
2. In a large bowl, beat eggs for 5 minutes until pale and thick. Gradually add sugar and vanilla.
3. Sift together flour, baking powder, and salt. Gently fold into egg mixture along with milk.
4. Spread batter evenly into pan and bake for 10–12 minutes or until cake springs back when touched.
5. While hot, turn cake out onto a clean kitchen towel dusted with powdered sugar. Roll the cake with the towel and let cool completely.
6. Meanwhile, combine chopped strawberries, sugar, and lemon juice. Let sit 15 minutes to macerate.
7. Unroll the cooled cake. Spread strawberries over surface, then cover with whipped cream frosting.
8. Gently roll the cake back up without the towel. Chill before slicing. Decorate with more whipped cream and sprinkles.

Roll the cake while it’s warm to avoid cracking.
Use fresh strawberries for the brightest flavor and texture.
Chill at least 1 hour before serving for clean slices.
