For the Crust:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 jalapenos, seeded and chopped
- 1 cup buttermilk
- 1/2 cup melted butter
- 2 eggs
- 1/4 cup honey
- 1 tablespoon lime juice
Instructions
1. Prepare the Crust:
- Preheat the oven to 400Β°F (200Β°C) and grease a 9-inch cast-iron skillet or baking dish.
- In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix buttermilk, melted butter, and eggs. Stir the wet ingredients into the dry ingredients until just combined, then fold in the jalapenos.
- Pour the batter into the prepared skillet and bake for 25-30 minutes or until a toothpick comes out clean.
- While the cornbread is baking, combine honey and lime juice in a small saucepan over low heat, stirring until well mixed. Drizzle over the warm cornbread before serving.
