For the Crust:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 jalapenos, seeded and chopped
  • 1 cup buttermilk
  • 1/2 cup melted butter
  • 2 eggs
  • 1/4 cup honey
  • 1 tablespoon lime juice

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400Β°F (200Β°C) and grease a 9-inch cast-iron skillet or baking dish.
  2. In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix buttermilk, melted butter, and eggs. Stir the wet ingredients into the dry ingredients until just combined, then fold in the jalapenos.
  4. Pour the batter into the prepared skillet and bake for 25-30 minutes or until a toothpick comes out clean.
  5. While the cornbread is baking, combine honey and lime juice in a small saucepan over low heat, stirring until well mixed. Drizzle over the warm cornbread before serving.

Notes

You can customize the seasonings to taste.
