Spice Cake with Eggnog Buttercream

A moist and warmly spiced cake topped with a rich, festive eggnog buttercream frosting.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/3 cup eggnog
  • 1 tsp rum extract (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. In another bowl, beat eggs, oil, buttermilk, and vanilla. Gradually add wet ingredients to dry, mixing until just combined.
  3. Divide batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Cool in pans for 10 minutes, then remove to a wire rack to cool completely.
  4. For the buttercream, beat the softened butter until creamy. Gradually add powdered sugar, then eggnog and rum extract (if using), beating until light and fluffy.
  5. Frost the cooled cake layers with the eggnog buttercream.

Notes

You can customize the seasonings to taste.
