Description

A perfectly grilled steak coated in a smoky, spicy chipotle rub, served with a cool and creamy chipotle ranch dipping sauce.


Ingredients

  • 1.5 lbs flank steak or skirt steak
  • 2 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1–2 tsp chipotle chili powder (adjust for heat)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • For the Sauce: 1/2 cup ranch dressing
  • 1 tbsp adobo sauce from canned chipotles
  • 1 tsp lime juice
  • 1 tbsp chopped fresh cilantro

Instructions

  1. Pat the steak dry with paper towels. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, oregano, chipotle powder, salt, and pepper.
  2. Rub the steak with olive oil, then coat evenly on both sides with the spice rub. Let it sit at room temperature for 20-30 minutes.
  3. Preheat your grill to high heat. Grill the steak for 4-6 minutes per side, or until desired doneness is reached (130-135Β°F for medium-rare).
  4. Transfer the steak to a cutting board and let it rest for 10 minutes. While the steak rests, make the sauce by whisking together the ranch dressing, adobo sauce, lime juice, and cilantro.
  5. Slice the steak thinly against the grain. Serve immediately with the chipotle ranch dipping sauce.
