Description
A perfectly grilled steak coated in a smoky, spicy chipotle rub, served with a cool and creamy chipotle ranch dipping sauce.

- 1.5 lbs flank steak or skirt steak
- 2 tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1β2 tsp chipotle chili powder (adjust for heat)
- 1 tsp salt
- 1/2 tsp black pepper
- For the Sauce: 1/2 cup ranch dressing
- 1 tbsp adobo sauce from canned chipotles
- 1 tsp lime juice
- 1 tbsp chopped fresh cilantro
Instructions
- Pat the steak dry with paper towels. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, oregano, chipotle powder, salt, and pepper.
- Rub the steak with olive oil, then coat evenly on both sides with the spice rub. Let it sit at room temperature for 20-30 minutes.
- Preheat your grill to high heat. Grill the steak for 4-6 minutes per side, or until desired doneness is reached (130-135Β°F for medium-rare).
- Transfer the steak to a cutting board and let it rest for 10 minutes. While the steak rests, make the sauce by whisking together the ranch dressing, adobo sauce, lime juice, and cilantro.
- Slice the steak thinly against the grain. Serve immediately with the chipotle ranch dipping sauce.
