For the Crust:

  • 1 cup cottage cheese
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup chopped spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350Β°F (175Β°C) and grease a muffin tin.
  2. In a large bowl, mix cottage cheese, eggs, and flour until well combined.
  3. Add baking powder, spinach, Parmesan cheese, salt, and pepper. Stir until just mixed.
  4. Divide the mixture into the muffin tin and bake for 20-25 minutes until golden brown.
  5. Let the muffins cool in the tin for a few minutes before transferring to a wire rack.
