For the Crust:
- 1 pre-made pie crust
- 2 cups cauliflower florets, chopped
- 1 cup red onion, thinly sliced
- 4 eggs
- 1 cup heavy cream
- 1/2 cup shredded cheese (Cheddar or Gruyere)
- 2 tablespoons fresh basil, chopped
- 1 teaspoon fresh rosemary, chopped
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Bake the pie crust for 10 minutes then set aside to cool.
- In a skillet, sauté cauliflower and onion with a little olive oil until soft.
- In a bowl, whisk together eggs, cream, cheese, basil, rosemary, salt, and pepper.
- Add the sautéed vegetables to the egg mixture, then pour into pre-baked pie crust.
- Bake for 30-35 minutes or until the center is set. Let cool slightly before serving.
