A delightful quiche combining the subtle flavors of cauliflower and red onion, enhanced with fresh basil and rosemary.

For the Crust:

  • 1 pre-made pie crust
  • 2 cups cauliflower florets, chopped
  • 1 cup red onion, thinly sliced
  • 4 eggs
  • 1 cup heavy cream
  • 1/2 cup shredded cheese (Cheddar or Gruyere)
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Bake the pie crust for 10 minutes then set aside to cool.
  3. In a skillet, sauté cauliflower and onion with a little olive oil until soft.
  4. In a bowl, whisk together eggs, cream, cheese, basil, rosemary, salt, and pepper.
  5. Add the sautéed vegetables to the egg mixture, then pour into pre-baked pie crust.
  6. Bake for 30-35 minutes or until the center is set. Let cool slightly before serving.

Notes

You can customize the seasonings to taste.
