For the Crust:
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- Red and green gel food coloring
- Assorted sprinkles and decorating icing
Instructions
1. Prepare the Crust:
- Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together the butter and sugar until smooth. Beat in the egg, vanilla extract, and almond extract. Gradually blend in the dry ingredients.
- Divide the dough in half. Tint one half with red food coloring and the other with green. Roll out dough on a floured surface and cut into elf shapes using a cookie cutter.
- Place cookies 1 inch apart on ungreased cookie sheets. Bake for 8 to 10 minutes, or until golden. Let stand on cookie sheet for 2 minutes before removing to cool on wire racks.
- Once completely cool, decorate the cookies with icing to create elf faces, hats, and outfits. Add sprinkles for extra festive cheer.
