For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Red food coloring
- Mini chocolate chips for eyes
- Mini marshmallows for hats
- Powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, mixing until combined.
- Divide the dough into two parts. Tint one part with red food coloring for Santa’s hats. Shape into small circles for faces and hats, place on the prepared baking sheet.
- Add mini chocolate chips for eyes and use mini marshmallows for the trim of Santa hats.
- Bake in the preheated oven for 10-12 minutes, or until edges are lightly golden. Cool on wire racks.
- Before serving, dust the cookies lightly with powdered sugar to mimic snow.
