  • Author: Chef Lolyta
  • Total Time: 1 hour 10 minutes
  • Yield: 8 1x

Description

A classic pie featuring honey with a touch of salt for balance.

Ingredients

Scale
  • For the crust:
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 3–4 tablespoons ice water
  • For the filling:
  • 1/2 cup unsalted butter, melted
  • 1 cup honey
  • 3 large eggs
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon sea salt
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. Prepare the crust: In a food processor, pulse the flour and salt together. Add the cubed butter and pulse until the mixture resembles coarse crumbs. Add ice water one tablespoon at a time until the dough comes together. Wrap in plastic and chill for 30 minutes.
  3. Roll out the dough on a floured surface and fit it into a 9-inch pie pan. Trim and crimp the edges, then chill the crust in the fridge for 15 minutes.
  4. Make the filling: In a large bowl, whisk together the melted butter and honey until smooth. Add the eggs one at a time, whisking well after each. Stir in the heavy cream, vanilla extract, and sea salt.
  5. Pour the filling into the prepared crust. Bake for 45-50 minutes, or until the center is set but still slightly wobbly. Sprinkle with flaky sea salt while warm.
  6. Allow the pie to cool completely on a wire rack before slicing.

Notes

For a flakier crust, ensure all ingredients are cold. Serve with whipped cream or vanilla ice cream.
