- For the crust:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 3β4 tablespoons ice water
- For the filling:
- 1/2 cup unsalted butter, melted
- 1 cup honey
- 3 large eggs
- 1 cup heavy cream
- 2 teaspoons vanilla extract
- 1/2 teaspoon sea salt
- Flaky sea salt for sprinkling
Instructions
- Preheat your oven to 375Β°F (190Β°C).
- Prepare the crust: In a food processor, pulse the flour and salt together. Add the cubed butter and pulse until the mixture resembles coarse crumbs. Add ice water one tablespoon at a time until the dough comes together. Wrap in plastic and chill for 30 minutes.
- Roll out the dough on a floured surface and fit it into a 9-inch pie pan. Trim and crimp the edges, then chill the crust in the fridge for 15 minutes.
- Make the filling: In a large bowl, whisk together the melted butter and honey until smooth. Add the eggs one at a time, whisking well after each. Stir in the heavy cream, vanilla extract, and sea salt.
- Pour the filling into the prepared crust. Bake for 45-50 minutes, or until the center is set but still slightly wobbly. Sprinkle with flaky sea salt while warm.
- Allow the pie to cool completely on a wire rack before slicing.
Notes
For a flakier crust, ensure all ingredients are cold. Serve with whipped cream or vanilla ice cream.
