For the Crust:
- 2 cups cooked rotisserie chicken, shredded
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- 1 teaspoon fresh thyme leaves
Instructions
1. Prepare the Crust:
- In a large pot, heat olive oil over medium heat. Add the onion and garlic, sautΓ© until the onion is translucent.
- Add the mushrooms to the pot and cook until they are browned and tender.
- Pour in the chicken broth and bring to a simmer. Add the shredded chicken, salt, pepper, and thyme. Simmer for 15 minutes.
- Stir in the heavy cream and cook for another 5 minutes until the soup is heated through. Adjust seasoning to taste.
