Rotisserie Chicken Mushroom Soup

A hearty and comforting soup made with tender pieces of rotisserie chicken and fresh mushrooms, perfect for a cozy meal.

For the Crust:

  • 2 cups cooked rotisserie chicken, shredded
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 teaspoon fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, sautΓ© until the onion is translucent.
  2. Add the mushrooms to the pot and cook until they are browned and tender.
  3. Pour in the chicken broth and bring to a simmer. Add the shredded chicken, salt, pepper, and thyme. Simmer for 15 minutes.
  4. Stir in the heavy cream and cook for another 5 minutes until the soup is heated through. Adjust seasoning to taste.
