Rotisserie Chicken Mushroom Soup

A comforting soup that combines the flavors of rotisserie chicken and earthy mushrooms in a hearty broth.

For the Crust:

  • 2 cups shredded rotisserie chicken
  • 1 cup sliced mushrooms
  • 4 cups chicken broth
  • 1 chopped onion
  • 2 cloves garlic, minced
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon thyme

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until vegetables begin to soften, about 5 minutes.
  2. Add mushrooms and sauté for an additional 3-4 minutes until soft.
  3. Stir in the chicken broth, shredded chicken, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

You can customize the seasonings to taste.
