For the Crust:
- 2 cups shredded rotisserie chicken
- 1 cup sliced mushrooms
- 4 cups chicken broth
- 1 chopped onion
- 2 cloves garlic, minced
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon thyme
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until vegetables begin to soften, about 5 minutes.
- Add mushrooms and sauté for an additional 3-4 minutes until soft.
- Stir in the chicken broth, shredded chicken, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
