Ingredients
2 lbs baby potatoes, halved
3 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Toss potatoes in a bowl with olive oil, garlic powder, onion powder, thyme, rosemary, salt, and pepper until evenly coated.
3. Spread potatoes in a single layer on the baking sheet, cut side down.
4. Roast for 25 to 30 minutes, flipping once halfway through, until golden brown and crisp.
5. Garnish with chopped parsley before serving if desired.

Cut potatoes into even sizes for uniform cooking.
