For the Crust:

  • 1 (2-pound) beef tenderloin
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 1/2 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons prepared horseradish

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 400°F (200°C). Season the beef tenderloin with olive oil, salt, and pepper.
  2. In a skillet, melt the butter over medium heat and sauté the sliced onions until caramelized. Add beef broth and continue to cook until liquid evaporates.
  3. Place the tenderloin in the oven and roast for 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare. Mix sour cream and horseradish in a bowl to prepare the sauce.
