For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/4 cup sour cream
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon white vinegar
  • 1/2 cup buttermilk
  • 2 tablespoons red food coloring
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C) and line a muffin pan with cupcake liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the sour cream and vanilla extract.
  3. In another bowl, sift together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix in the baking soda and vinegar, then stir in the red food coloring. Pour the batter into the prepared liners, filling each about two-thirds full.
  4. Bake in preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely before frosting with cream cheese frosting.

Notes

You can customize the seasonings to taste.
