For the Crust:
- 1 1/2 cups crushed chocolate sandwich cookies
- 1/4 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 2/3 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 1/4 cup cocoa powder
- 1 1/2 cups sliced fresh strawberries
Instructions
1. Prepare the Crust:
- Preheat your oven to 350Β°F (175Β°C). Grease a 9-inch springform pan.
- Combine crushed cookies with melted butter and press into the bottom of the pan. Bake for 10 minutes, then cool.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla, food coloring, and cocoa. Pour mixture over the crust.
- Bake for 30 minutes, then let it cool at room temperature. Refrigerate for at least 4 hours or overnight.
- Top with sliced strawberries before serving.
