This delicious Red Velvet Strawberry Cheesecake combines the rich flavors of red velvet cake with a creamy cheesecake layer, topped with fresh strawberries.

For the Crust:

  • 1 1/2 cups crushed chocolate sandwich cookies
  • 1/4 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 2/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1/4 cup cocoa powder
  • 1 1/2 cups sliced fresh strawberries

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350Β°F (175Β°C). Grease a 9-inch springform pan.
  2. Combine crushed cookies with melted butter and press into the bottom of the pan. Bake for 10 minutes, then cool.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla, food coloring, and cocoa. Pour mixture over the crust.
  4. Bake for 30 minutes, then let it cool at room temperature. Refrigerate for at least 4 hours or overnight.
  5. Top with sliced strawberries before serving.
