For the Crust:

  • 1 cup fresh raspberries
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 12 ladyfinger cookies
  • 1/2 cup raspberry jam
  • 1/4 cup raspberry liqueur or coffee
  • Cocoa powder for dusting

Instructions

1. Prepare the Crust:

  1. In a bowl, gently mash the fresh raspberries with half of the sugar and set aside. In another bowl, whisk together the mascarpone, remaining sugar, vanilla extract, and heavy cream until smooth.
  2. Quickly dip each ladyfinger into raspberry liqueur or coffee and layer them in a dish. Spread the raspberry jam over the layer followed by half of the mascarpone mixture and mashed raspberries.
  3. Repeat the layers, ending with the mascarpone mixture on top. Cover the dish and let it chill in the refrigerator for at least 4 hours or overnight. Dust with cocoa powder before serving.
