For the Crust:
- 1 cup fresh raspberries
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- 12 ladyfinger cookies
- 1/2 cup raspberry jam
- 1/4 cup raspberry liqueur or coffee
- Cocoa powder for dusting
Instructions
1. Prepare the Crust:
- In a bowl, gently mash the fresh raspberries with half of the sugar and set aside. In another bowl, whisk together the mascarpone, remaining sugar, vanilla extract, and heavy cream until smooth.
- Quickly dip each ladyfinger into raspberry liqueur or coffee and layer them in a dish. Spread the raspberry jam over the layer followed by half of the mascarpone mixture and mashed raspberries.
- Repeat the layers, ending with the mascarpone mixture on top. Cover the dish and let it chill in the refrigerator for at least 4 hours or overnight. Dust with cocoa powder before serving.
