Raspberry Chocolate Lava Cupcakes

Decadent chocolate cupcakes with a molten raspberry center, perfect for dessert lovers.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry preserves
  • 4 ounces dark chocolate, chopped

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, combine flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, mix sugar, melted butter, eggs, and vanilla extract until well combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fill each cupcake liner halfway with batter, place 1 teaspoon of raspberry preserves in the center, then top with more batter.
  6. Add a few pieces of chopped dark chocolate to the top of each cupcake.
  7. Bake for 20-25 minutes or until a toothpick inserted into the edge of a cupcake comes out clean.
  8. Allow to cool slightly before serving.

Notes

You can customize the seasonings to taste.
