For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup raspberry preserves
- 4 ounces dark chocolate, chopped
Instructions
1. Prepare the Crust:
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, combine flour, cocoa powder, baking soda, and salt.
- In a large bowl, mix sugar, melted butter, eggs, and vanilla extract until well combined.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Fill each cupcake liner halfway with batter, place 1 teaspoon of raspberry preserves in the center, then top with more batter.
- Add a few pieces of chopped dark chocolate to the top of each cupcake.
- Bake for 20-25 minutes or until a toothpick inserted into the edge of a cupcake comes out clean.
- Allow to cool slightly before serving.
