Pumpkin Spice Gooey Cake with Cream Cheese Frosting

For the Crust:

  • 1 box spice cake mix
  • 1 egg
  • 1/2 cup melted butter
  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 8 oz cream cheese, softened
  • 1/2 cup softened butter
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, combine spice cake mix, egg, and melted butter. Press mixture into the bottom of the prepared dish.
  3. In another bowl, beat cream cheese, softened butter, and pumpkin puree until smooth. Add powdered sugar and pumpkin pie spice, mixing until well combined. Spread over the cake mixture.
  4. Bake for 30 minutes or until edges are golden brown and the center is slightly set.
  5. Allow cake to cool completely. Mix vanilla extract into any remaining frosting, spread evenly across the cake, then slice and serve.
