For the Crust:
- 1 box spice cake mix
- 1 egg
- 1/2 cup melted butter
- 1 cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- 8 oz cream cheese, softened
- 1/2 cup softened butter
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, combine spice cake mix, egg, and melted butter. Press mixture into the bottom of the prepared dish.
- In another bowl, beat cream cheese, softened butter, and pumpkin puree until smooth. Add powdered sugar and pumpkin pie spice, mixing until well combined. Spread over the cake mixture.
- Bake for 30 minutes or until edges are golden brown and the center is slightly set.
- Allow cake to cool completely. Mix vanilla extract into any remaining frosting, spread evenly across the cake, then slice and serve.
