For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 cups cream cheese
  • 1 cup pumpkin puree
  • 2/3 cup sugar
  • 2 teaspoons pumpkin pie spice
  • 3 large eggs
  • 1/4 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 325Β°F (165Β°C) and prepare a 9-inch springform pan with cooking spray.
  2. In a bowl, combine graham cracker crumbs and butter, then press into the bottom of the prepared pan.
  3. Beat cream cheese, pumpkin puree, sugar, and pumpkin pie spice in a large bowl until creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour the mixture over the crust in the springform pan.
  6. Bake for 45-50 minutes or until the center is set. Remove from oven and cool completely.
  7. Drizzle caramel sauce over the top before serving.
