Pineapple Upside-Down Cake Bars

Delicious and moist pineapple upside-down cake bars with a sweet caramelized topping.

For the Crust:

  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed brown sugar
  • 1 can (20 oz) pineapple slices, drained
  • 10 maraschino cherries
  • 1 box yellow cake mix
  • 3 large eggs
  • 1 cup pineapple juice

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350°F (175°C).
  2. Pour melted butter into a 9×13 inch baking dish. Sprinkle brown sugar evenly over the butter.
  3. Arrange pineapple slices over the sugar and place a cherry in the center of each pineapple ring.
  4. In a mixing bowl, combine the cake mix, eggs, and pineapple juice. Beat until smooth.
  5. Pour the batter over the pineapple slices, spreading evenly.
  6. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool for 10 minutes and then invert the cake onto a serving platter.
