For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 2 tablespoons melted butter
- 2 (8 ounce) packages cream cheese
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/2 cup crushed pineapple, drained
- 3 eggs
Instructions
1. Prepare the Crust:
- Preheat the oven to 325Β°F (165Β°C) and butter a 9-inch springform pan.
- Mix the graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press into the bottom of the pan.
- Beat the cream cheese, 1 cup sugar, and vanilla until smooth and creamy. Add the eggs one at a time, mixing well after each. Stir in the pineapple, and pour over the crust.
- Bake for 50 minutes or until the center is set. Cool, then refrigerate for at least 4 hours before serving.
