Perfect Grilled Salmon and Quinoa Stack with Avocado Cream

For the Crust:

  • 4 salmon fillets (6 oz each)
  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 ripe avocado
  • 1/4 cup Greek yogurt
  • 1 lime, juiced
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Cook quinoa according to package instructions, using 2 cups of water. Fluff with a fork and set aside.
  2. Preheat grill to medium-high heat. Brush salmon fillets with olive oil and season with smoked paprika, salt, and pepper.
  3. Grill salmon for 4-5 minutes per side, or until cooked through. Remove from heat and let rest.
  4. In a blender, combine avocado, Greek yogurt, lime juice, garlic, and a pinch of salt. Blend until smooth.
  5. To assemble, place a layer of quinoa on each plate, top with a salmon fillet, and drizzle with avocado cream. Garnish with fresh cilantro.

Notes

You can customize the seasonings to taste.
