A vibrant and refreshing salad that combines sweet pears, tart pomegranate arils, and creamy goat cheese over a bed of fresh spinach, all tossed in a tangy and sweet homemade dressing.

For the Crust:
- 6 cups fresh baby spinach
- 1 ripe pear, thinly sliced
- 1/2 cup pomegranate arils
- 1/4 cup crumbled goat cheese
- 1/4 cup chopped pecans, toasted
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon pure maple syrup
- 1 teaspoon Dijon mustard
- 1 small shallot, minced
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- For the dressing, whisk together the olive oil, lemon juice, maple syrup, Dijon mustard, and minced shallot in a small bowl until well combined. Season with a pinch of salt and pepper.
- In a large salad bowl, add the fresh baby spinach. Drizzle about half of the dressing over the spinach and toss gently to coat the leaves.
- Arrange the thinly sliced pear and pomegranate arils over the dressed spinach. Sprinkle the crumbled goat cheese and toasted pecans on top.
- Drizzle the remaining dressing over the assembled salad. Serve immediately.
