A vibrant and refreshing salad that combines sweet pears, tart pomegranate arils, and creamy goat cheese over a bed of fresh spinach, all tossed in a tangy and sweet homemade dressing.

For the Crust:

  • 6 cups fresh baby spinach
  • 1 ripe pear, thinly sliced
  • 1/2 cup pomegranate arils
  • 1/4 cup crumbled goat cheese
  • 1/4 cup chopped pecans, toasted
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon pure maple syrup
  • 1 teaspoon Dijon mustard
  • 1 small shallot, minced
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. For the dressing, whisk together the olive oil, lemon juice, maple syrup, Dijon mustard, and minced shallot in a small bowl until well combined. Season with a pinch of salt and pepper.
  2. In a large salad bowl, add the fresh baby spinach. Drizzle about half of the dressing over the spinach and toss gently to coat the leaves.
  3. Arrange the thinly sliced pear and pomegranate arils over the dressed spinach. Sprinkle the crumbled goat cheese and toasted pecans on top.
  4. Drizzle the remaining dressing over the assembled salad. Serve immediately.
