For the Crust:

  • 1 cup grated zucchini
  • 1 cup grated potato
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 375Β°F (190Β°C) and grease a muffin tin.
  2. In a large bowl, mix grated zucchini, grated potato, and Parmesan cheese.
  3. In a separate bowl, whisk together eggs, flour, baking powder, salt, and pepper.
  4. Combine the wet and dry ingredients and mix until just combined.
  5. Divide the mixture evenly into the muffin tin cups.
  6. Bake for 25-30 minutes or until golden brown and cooked through.
