For the Crust:
- 24 Oreo cookies, divided
- 3 tablespoons unsalted butter, melted
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips, melted and cooled
- 1 cup heavy whipping cream
Instructions
1. Prepare the Crust:
- Line an 8Γ8 inch baking pan with parchment paper. Crush 20 Oreo cookies into fine crumbs. Mix with melted butter until combined. Press firmly into the bottom of the prepared pan.
- In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the melted and cooled chocolate until fully incorporated.
- In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the chocolate cheesecake mixture until no white streaks remain. Spread this filling evenly over the Oreo crust.
- Crush the remaining 4 Oreo cookies and sprinkle them over the top. Cover and refrigerate for at least 4 hours, or until firm. Cut into small squares before serving.
