For the Crust:

  • 1 cup unsweetened applesauce
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, mix together applesauce, sugar, vegetable oil, egg, and vanilla extract until well combined.
  3. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
  4. Divide the batter evenly among the muffin cups. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
