For the Crust:
- 1 cup unsweetened applesauce
- 1/2 cup sugar
- 1/4 cup vegetable oil

- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg

Instructions
1. Prepare the Crust:
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, mix together applesauce, sugar, vegetable oil, egg, and vanilla extract until well combined.
- In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
- Divide the batter evenly among the muffin cups. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
