For the Crust:
- 1 cup shelled unsalted pistachios
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat the oven to 350Β°F (175Β°C). Grease and flour a 9Γ5 inch loaf pan.
- In a food processor, finely grind the pistachios. In a bowl, combine the ground pistachios, flour, baking powder, and salt.
- In another bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each. Stir in the vanilla. Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients.
- Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
