For the Crust:

  • 1 cup shelled unsalted pistachios
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350Β°F (175Β°C). Grease and flour a 9Γ—5 inch loaf pan.
  2. In a food processor, finely grind the pistachios. In a bowl, combine the ground pistachios, flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each. Stir in the vanilla. Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients.
  4. Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  5. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
