A decadent cake combining the flavors of rich chocolate and coffee in a light mousse topping.

For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup brewed coffee
- 1 cup sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup heavy cream
- 1/2 cup chopped dark chocolate
Instructions
1. Prepare the Crust:
- Preheat the oven to 350Β°F (175Β°C) and grease a 9-inch round cake pan.
- In a bowl, mix flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat eggs with sugar until creamy, then add oil, coffee, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
- Pour the batter into the prepared pan and bake for 25-30 minutes.
- Allow the cake to cool completely.
- To prepare the mousse, melt chopped dark chocolate in a bowl over simmering water, let cool slightly.
- Whip the heavy cream until soft peaks form, then gently fold the cooled chocolate into the cream.
- Spread the mousse evenly over the cooled cake and refrigerate for at least 1 hour before serving.
