Indulgent individual cheesecakes topped with caramelized pineapple and a hint of cherry.

For the Crust:
- 1/2 cup crushed graham crackers
- 1/4 cup melted butter
- 1/2 cup brown sugar
- 8 canned pineapple rings
- 8 maraschino cherries
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
Instructions
1. Prepare the Crust:
- Preheat the oven to 350Β°F (175Β°C) and line a muffin tin with paper liners.
- Mix crushed graham crackers and melted butter. Press mixture into the bottom of each liner.
- Place a pineapple ring and a cherry at the bottom of each liner. Sprinkle with brown sugar.
- Blend cream cheese, granulated sugar, vanilla, and eggs until smooth. Pour over pineapple.
- Bake for 20-25 minutes or until set. Cool completely before removing from the pan.
