Mini Pineapple Upside-Down Cheesecakes

Indulgent individual cheesecakes topped with caramelized pineapple and a hint of cherry.


Ingredients

For the Crust:

  • 1/2 cup crushed graham crackers
  • 1/4 cup melted butter
  • 1/2 cup brown sugar
  • 8 canned pineapple rings
  • 8 maraschino cherries
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350Β°F (175Β°C) and line a muffin tin with paper liners.
  2. Mix crushed graham crackers and melted butter. Press mixture into the bottom of each liner.
  3. Place a pineapple ring and a cherry at the bottom of each liner. Sprinkle with brown sugar.
  4. Blend cream cheese, granulated sugar, vanilla, and eggs until smooth. Pour over pineapple.
  5. Bake for 20-25 minutes or until set. Cool completely before removing from the pan.

Notes

You can customize the seasonings to taste.
