For the Crust:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 eggs
- 1/3 cup pineapple juice
- 1/2 cup crushed pineapple
Instructions
1. Prepare the Crust:
- Preheat your oven to 350Β°F (175Β°C) and grease a mini muffin pan.
- In a medium bowl, whisk together the flour and sugar. In a separate bowl, mix the melted butter, eggs, and pineapple juice.
- Combine the wet and dry ingredients until smooth. Fold in the crushed pineapple. Fill the mini muffin cups about 3/4 full and bake for 20-25 minutes or until a toothpick inserted comes out clean.
