These mini pineapple cakes are a delightful treat with a perfect balance of sweetness and tropical flavor.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1/3 cup pineapple juice
  • 1/2 cup crushed pineapple

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350Β°F (175Β°C) and grease a mini muffin pan.
  2. In a medium bowl, whisk together the flour and sugar. In a separate bowl, mix the melted butter, eggs, and pineapple juice.
  3. Combine the wet and dry ingredients until smooth. Fold in the crushed pineapple. Fill the mini muffin cups about 3/4 full and bake for 20-25 minutes or until a toothpick inserted comes out clean.
