These mini caramel apple cheesecakes are the perfect combination of creamy cheesecake, sweet apple topping, and a rich caramel drizzle.

For the Crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple pie filling, chopped
  • 1/2 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 325Β°F (160Β°C) and line a muffin tin with cupcake liners.
  2. Mix the graham cracker crumbs with melted butter and press a tablespoon into each muffin cup to form the crust.
  3. Beat cream cheese and sugar until smooth. Add eggs and vanilla, beating until combined. Pour mixture over crusts.
  4. Bake for 20 minutes or until set. Cool completely, then top with chopped apple pie filling and a drizzle of caramel sauce.
