These delightful mini caramel apple cheesecake bites provide the perfect combination of creamy cheesecake, sweet caramel, and fresh apples, all in a bite-sized treat.

For the Crust:

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/4 teaspoon vanilla extract
  • 1/2 cup diced apples
  • 1/4 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325 degrees F (163 degrees C) and line a mini muffin tin with paper liners.
  2. Mix graham cracker crumbs with melted butter and press a spoonful into the bottom of each liner.
  3. In a bowl, beat together cream cheese, sugar, egg, and vanilla extract until smooth.
  4. Fold in diced apples, then distribute the mixture evenly over the crusts in the muffin tin.
  5. Bake for 15-18 minutes or until the centers are set, then let cool completely.
  6. Drizzle with caramel sauce before serving.
