For the Crust:
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1/4 teaspoon vanilla extract

- 1/4 cup caramel sauce
Instructions
1. Prepare the Crust:
- Preheat oven to 325 degrees F (163 degrees C) and line a mini muffin tin with paper liners.
- Mix graham cracker crumbs with melted butter and press a spoonful into the bottom of each liner.
- In a bowl, beat together cream cheese, sugar, egg, and vanilla extract until smooth.
- Fold in diced apples, then distribute the mixture evenly over the crusts in the muffin tin.
- Bake for 15-18 minutes or until the centers are set, then let cool completely.
- Drizzle with caramel sauce before serving.
